Copper Bottom Silver Rum
Copper Bottom Craft Distillery opened in Holly Hill, Florida just steps from the Halifax River during the fall of 2016. Owned and operated by the Craig family this small craft distillery has begun producing rum and vodka for the Florida market.
Jeremy Craig, head distiller, attended training at the Moonshine University located in Kentucky while developing the flavor profile for his rum. During this process he chose to use dehydrated sugar cane juice instead of molasses.The bottle used for this review is from the first batch and blended to 80 proof.
Appearance/Presentation
The 750ml bottle is sealed with a black plastic cork. The rum is clear in the bottle and glass. Swirling the liquid creates a thick ring that spins off equally thick legs that quickly bead up and evaporate.
Nose
The aroma has a strong vanilla note balanced by the tang of ethyl-alcohol.
Palate
Sipping the rum I found that the vanilla from the aroma was front and center forming the high notes of the flavor profile. A light bite of citrus peel formed mid-palate. Earthy minerals formed the foundation enveloping the alcohol notes.These notes combined and lingered into a medium finish.
Review
Keeping in mind this sample is from the first batch, I believe this is a solid effort that will only improve as time and mastery of the nuances of fermentation and distillation will provide.
It will be interesting to see how they develop future products and if they switch away from the controversial fermentation of dehydrated sugar cane juice and use molasses instead.
By design, this immature rum is created for cocktails and does well in citrus based drinks.
