The History and Science of the Barrel is designed to teach all aspects of the rum's transformation while aging in wooden casks.  The course curriculum includes:

  • Understanding Extraction Interaction
  • Understanding Acidification and Esterification
  • Understanding Oak Morphology
  • Barrel Care and Maintenance
