Rum and Brown Sugar Marinated Steak
Ingredients:
- 1/4 C. Soy Sauce
- 1/4 C. Teriyaki Sauce
- 1/3 C. Dark Rum
- 1/3 C. Brown Sugar, packed
- 2 Tbsp. Spicy Brown Mustard
- 2 Lb. Flank Steak
Directions:
- In a small bowl combine soy sauce, teriyaki sauce, rum, brown sugar and mustard. Mix thouroughly until the sugar has dissolved.
- Place the flank steak in a shallow baking dish and pour the marinade over the meat. Let the meat marinade at room temperature for 30 minutes.
- When the grill is ready, remove the steak from the marinade making sure to shake off any excess fluid. Reserve the marinade for a second dip.
- Grill the steak for 3-4 minutes to sear then flip steak and grill for additional 3-4 minutes. Remove steak from grill and place back in the pan with the marinade for a second coat.
- Return steak to grill and grill each side for an additional 2-3 minutes or until steak is cooked to your liking. Remove steak from grill and allow to rest for 5 minutes before cutting.
- While steak is resting, pour the marinade into a small saucepan and boil over medium-high heat until marinade becomes syrupy, approximately 3 minutes. Slice the steaks thinly across the grain and serve drizzled with the sauce.
Lime-Cilantro Butter Sauce
Ingredients:
- 1 Medium Shallot, minced
- 4 Garlic Cloves, minced
- ½ C. White Rum
- Juice from 2 Limes
- 2 Tbsp. Lime Zest
- ½ C. Heavy Cream
- 2 Jalapeño Peppers, remove seeds
- 1 Stick Unsalted Butter, room temperature, cut into small pieces
- 1 Bunch Cilantro
- Salt to taste
Instructions:
- Combine the shallot and garlic cloves in a mini food processor and pulse until well minced.
- Bring the white rum to a boil in a small saucepan over medium heat and reduce to half the amount.
- Add the minced shallots and garlic, lime juice, lime zest and cream to the reduced wine. Continue cooking until reduced by half again, about 10 minutes, and remove from the heat.
- In the food processor, add the jalapeño peppers and warm sauce mix and blend. Add the butter, piece by piece, and blend well. Add the cilantro and blend until completely minced. Add salt (to taste). Serve the sauce warm.
