Cooking with Rum
Rum & Molasses Glazed Ham
Ingredients:
- ⅔ C. Dark Rum
- 1 C. Honey
- ⅓ C. Molasses
- ½ C. Orange Marmalade
- Nonstick cooking spray
- 1 11-pound whole bone-in smoked ham, fully cooked, unsliced
Directions:
- Preheat oven to 350°F.
- In a medium saucepan, heat rum, honey, molasses, and marmalade over low heat for 15 minutes- stirring a bit to prevent burning. Set aside.
- Place whole ham inside a deep baking dish or in a disposable foil pan.
- Optional- with a sharp knife, cut a diamond pattern across the whole ham.Spread half of the rum glaze over the ham and roast for 2 ½ - 3 hours, uncovered, until ham reaches an internal temperature of 130°F.
- Baste occasionally with additional glaze as the ham cooks.
- Take ham out of oven and seal the pan with foil in a tent like form and let ham stand for 20 minutes before slicing.
Rum & Molasses Glazed Ham
10 Minute Rum Pudding
Ingredients for Syrup:
- 2 ½ cups Boiling Water
- 1 ½ cups Sugar
- 1 tablespoon Butter
- 1 tablespoon Lemon Juice
- 1 teaspoon Cinnamon
- 1 teaspoon Ground Ginger
- 2 Tbsp. Jamaican or Guyanese Dark Rum
Ingredients for Dough:
- ½ cup Apricot Jam
- ½ cup Butter, melted
- 2 teaspoons Baking Soda
- 1 ½ cups Flour
- 1 pinch Salt
Directions:
Syrup:
- Add all ingredients for the syrup in a sauce pan.
- Stir over high heat until sugar has melted.
Dough:
- In a separate sauce pan, melt butter and apricot jam together stirring constantly. Add baking soda, flour and salt. Mix all ingredients well.
- Pour syrup into a high greased, microwave safe bowl. Scoop spoonfuls of dough mixture and place in syrup. Cover the bowl and microwave on high for 5 minutes.
- Serve warm in bowls and drizzle some rum over the pudding. Serves 6.
