Cooking with Rum
Rum Glazed Pork Chops
Ingredients:
- 3 lbs. Pork Chops, boneless
- 6 Large Garlic Cloves, peeled
- 1 Large White Onion, quartered.
- 1 tsp. Sea Salt
- ¼ tsp. Ground Black Pepper
- ½ C. Chili Sauce* (see recipe below)
- ½ C. Dark Rum
- ¼ C. Brown Sugar
- ½ C. Lime Juice
- ¼ C. Olive Oil
Directions:
- Heat a pan and add a bit of olive oil.
- Sprinkle pork chops with garlic powder and the brown chops on both sides. Remove chops from pan and place in a crockpot.
- Put garlic cloves, onion, salt, pepper, chili sauce, rum, brown sugar and lime juice in a food processor. Process until finely chopped.
- Drizzle with olive oil and pulse gently to mix. Pour mixture over the pork chops in crockpot.
- Cook on low for 8 hours or on high for 5 hours. Optional- If you have a pressure cooker, cook for 25 minutes on high pressure.
Rum Glazed Pork Chops
*Chili Sauce
Ingredients:
- 1 C. Tomato Sauce
- 2 Tbsp. Brown Sugar
- 2 Tbsp. Distilled White Vinegar
- 2 Tbsp. Dark Rum
- ½ tsp. Chili Powder
- ¼ tsp. Ground Allspice
- ¼ tsp. Garlic Powder
- ¼ tsp. Onion Powder
Directions:
Whisk all ingredients in a bowl.
Rum Bings
Ingredients:
- 1 lb. Bing Cherries, fresh and pitted
- ½ C. Currant Jelly
- ¼ C. Dark Rum
Directions:
- Mix all ingredients together thoroughly. The rum will dilute and mix with the jelly very quickly.
- Refrigerate for at least three hours and then pour over ice cream of your choice. Serves 4.
